Elpidio Arboleda Tabares is the owner of La Soledad Farm; an 8-hectare farm in Northwest Colombia, an area mostly within the Andes Mountains. Of the 8 hectares, about 1.5 are planted for coffee, with an annual production of 25 bags. We have secured one of these 75 lb bags. Elpidio harvests his coffee when ripe, and depulps and ferments his coffee in batches, mixing the freshly depulped coffee with coffee that has already fermented. In total, the fermentation time is 72 hours. After washing, the seeds are dried in rooftop dryers under the sun. This most recent harvest that we are roasting received 10th place in the Land of Diversity cupping competition and auction in Colombia.
