The farm this coffee is sourced from, Finca Himalaya, is a 60 hectare farm. This specific coffee is honey-processed, which means it is picked ripe and depulped the same day. It's then spread on raised beds and dried outdoors in its mucilage for 23-25 days. Removing some of the fruit helps speed up the drying rate of coffee while still imparting some of the characteristics that natural-process coffees are know for, such as fruit sweetness, dark chocolate, and heavy body.
